Italian Beef Stew Recipe

Ingredients you will need to serve one person
- 75g pack beef stir-fry strips, or use beef steak, thinly sliced (90 cal.)
- ½ yellow pepper, deseeded and thinly sliced (5 cal.)
- 100g can chopped tomatoes (15 cal.)
- Small handful pitted olives (20 cal.)
- ½ tbsp olive oil, better if extra virgin (60 cal.)
- ¼ onion sliced (10 cal.)
- ¼ garlic clove, sliced
- ½ sprig rosemary, chopped
- 5 pinches of salt

Cooking Instructions
- In a large saucepan, cook onion and garlic in olive oil for 5 mins until softened and turning golden;
- Tip in the beef strips, pepper, tomatoes and rosemary, then bring to the boil;
- Sprinkle the 5 pinches of salt all over;
- Simmer for 15 mins until the meat is cooked through, adding some boiling water if needed;
- Stir through the olives and serve;
